I prefer the soft shell kind the better over the snapper. Nothing in the turtle should be thrown out except the head. One of the best tasting dishes and favorite of several US presidents.

When they hatch there are few surviving turtles in 1st year. Turtle species can't handle the pressure that is currently put on them by fishermen. The capture rate is greater then survival rate for turtles.  Deer however are managed and have a completely different mathematical model of population dynamics.
