Couple of points: 1) Use turkey stock when making turkey gravy, not chicken stock. You may not even need stock if you have enough drippings after roasting. 2) After you've mixed the flour into the drippings, stir in the stock SLOWLY to avoid lumps. Use a whisk to make it easier. She makes it seem like you can just pour it in, but it's no so, you have to add it slowly.

Very true. You can always order turkey stock online, and sometimes Whole Foods has it. Usually when I make a turkey, especially if I use a bag, there is enough broth to make gravy...but you have to make sure you skim off all the fat or it's too greasy. BTW, try grilling a turkey some time, using the indirect heat method and placing a drip pan underneath. The resultant gravy is amazing.
