I think Easter Eggs in video games are things the developers put in there that doesn't have anything to do with the main story, and might be done just for a laugh (Like the cheese you can find in Perfect Dark) or maybe to hint at another game (DK Mode in 007 Goldeneye). The picture in this vid may be simply an inside joke to the developers or it has a special meaning that we don't understand. Maybe an SS Officer insignia or something.

Death cards are used to alter the single player gameplay online. You just pick which ones you want to use. One card makes it so you pick up half ammo, making ammo scarce. One makes enemies killed with a headshot blow up. One makes it so you can only use knives and grenades (sticks and stones). Stuff like that.
