There's been a lot of questions lately about shots. i work at starbucks (not because i thought it would be a good way to get into coffee, because it's a JOB) and they are always telling us to "preserve" the shots in milk so they don't "expire." they ingrain that in your head about 20,000 times on day one, so it's REALLY hard for me to accept that they don't expire. i think starbucks says this to encourage their "partners" to work faster and to crank out the drinks without a second thought. HELP?

Expresso shots shouldn't expire after ten seconds (otherwise that will defeat the point of people drinking expresso). They will oxidise in up to seven minutes.

Nothing wrong with those expresso shots at all. If you notice the cremar thinning, that's when you know they're starting to expire.

Yes, the shots DO expire after 10 seconds. I work at a Starbucks, and in the training, it says several times that espresso expires after 10 seconds.

(And there is no point of drinking espresso. After the 10 seconds, it tastes bitter and almost undrinkable.)

I as well work at the Bux, (can't beat part-time benefits!), though we are sorely incorrect in many of our methods and procedures. We use super-automatic espresso machines and are geared towards the average consumer's taste and geared more towards speed, rather than quality, (sorry to burst anyone's bubble, but Starbucks, while consistent, is nowhere near "legendary" in taste). In Italy, I, as well as many natives, would often drink a cup of espresso for upwards of a half-hour. My two cents.
