  • I've probably watched 50 bbq rib competitions and nobody boils their ribs before hand. Boiling makes pork tough and chewy. I think that comes from the people who are afraid of under-cooked pork who want it precooked before it goes on the grill. If that's what you like then go for it and enjoy it, it doesn't affect me whatsoever.

  • Nicely done. You explained the process very well with excellent reasoning. I am lazy and don't always remove the membrane - just score it or leave it. It does trap moisture.

  • There are a million and one ways to do ribs, but your way is simple and very effective. I wholeheartedly agree with doing your own rub. Since I don't have a smoker, I bake my ribs at 275 degrees for 2 and half hours and then barbecue them for ten minutes. Works out pretty good too.

    You boil? No wonder you need sauce. Do ribs my way, and you won't need sauce.

    Who said anything about standing around and waiting? I go outside, put the ribs on the WSM, and leave them alone for 3.5 hours. I go back inside and have a cold one. You, on the other hand, boil your ribs and heat up your house. Smart.

    PS tell us where you are cheffing around so I won't eat there.

  • I wouldn't do it for 6 hours in straight smoke. Some people do 3 hours in smoke, then wrap them in foil and put them back in the smoker for 2 more hours, then finally remove them from the foil and smoke them for another hour. The foil helps to keep the ribs moist while they cook but I don't think I could wait that long :-)

  • Thanks for all the good information. I just test ran my smoker and it seems to regulate @ about 250 degrees. Ill go with the 3 and a half hours and test with the toothpick. Can tell I'm a newbie thinking I could wait that long smelling the smoky goodness!

  • You can put a pan of water in the bottom of the smoker... the water vapor will help prevent the ribs from drying out.

    But 6 hours is definitely too long. I usually do mine for about 4-5 hours at 225 F. At 250 F, they should be done in a little under 4 hours.

  • Sliding through easily with the toothpick can indicate undercooked meat no? and with pork you should be really careful. What sort of tempreture should the meat be at in the center when fully cooked? (if using a tempreture sensor)I have the rib rack, just really nervous about undercooking as a result of not boiling (or burning them for that matter)

  • trust me, three and a half hours in 250*F smoke is enough to cook it through. Ribs are very forgiving. If you cook it an hour shorter, your ribs will still be cooked, but tougher. An hour longer, and your ribs will be cooked but drier.

  • good! natural and no boiling. i just BBQ them, putting BBQ sause on them and flipping them every few mins for about 45 mins.

  • Excuse me, but real barbecue means low and slow - lower temperaturues and slower cooks. The tougher cuts of meat used in barbecue require longer cooking times in order to make them tender.

    What you are doing is grilling.  Nothing wrong with that, if it works for you.

  • i used to boil or other things to get the fall-off-the-bone tenderness, but if you pull off the membrane and cook 'em slowly, for 3 to 4 hours in foil, the meat is damn tender!

  • As a barbecue society member, I do a lot of smoking and I think this is a great video. A big help to anyone who's doing their first ribs.
