The noise you are hearing is the tissue in his airway (tongue , tonsils , uvula , adenoids,soft pallet tissue) collapsing and clogging his airway. He is struggling to breathe. These obstructive airway events (snoring , Apnea) are preventing him from getting a deep sleep.
