All the immigrant groups brought their own version and it has become a staple food over here since the very beginning. Here's a little history lesson to a Swede, the U.S. is made up of many different cultures not one. Much of the U.S. is made up of the best of Europe's people after they left to find a better life. That is why Sauerkraut and hot dogs, another item based on Europe is All-American.

The show starts out talking about home canning, but fermented kraut is not canned. It is alive. Canned food is dead. Sandor Katz is brilliant.
