What ever happened to the old fashion souther recipes that only called for pears and sugar. I remember my grandmother making pear preserves as a child and that was the only two ingreadents, no honey, no water, or anything else, and those were the best I have ever had.

@wgseagal I've experimented with pears for pies and other baked goods. The challenge is that oears contain a lot of water and very mild flavor. When you add enough starch to absorb the liquid, you quickly overwhelm the pear flavor. Even using custard to hold the pears together (rather than flour or cornstarch) tends to be too much for the pear flavor. Pectin may be the answer.
Where I've been happiest baking with pears is when I made pear "crisp" which is much soggier than apple crisp.
@wgseagal I just made two different types and jars of pear sauce (think apple).
One pie I used juice of half a lemon, some all spice and one very tart apple in with the 5-6 pears. Deeeelicious! The second pie, I left serenely to itself except for a dash of all spice. Neither pie had added sugar, the pears are sweet enough!
@StUDioROMe Maybe it's different where you live, or you've found a way to grow food during the really cold months, but where I live, right now's about the time we put the garden to bed. For New Englanders with a huge harvest and no season-extenders, now is the perfect time for cooking videos! :-)

free on the web. US pairs can be done in hot water bath. Asian pears are too acidic and must be done in pressure cooker.
