  • You know, he was simply giving you some ideas to use. If you look down your nose at store-bought sauces, then make your own and use this technique to decorate the plates to your own liking. Ditto the desserts...make your own. This is simply an idea for a nice presentation. Use your OWN imagination and skill set to make it your own. I can see using savoury sauces to decorate a dinner plate as well. Thanks for the ideas.

  • what he doesn't mention is that the viscosity of the liquids does play a part in whether or not they start to bleed together....make sure everything is the same viscosity

  • That looks like a plate of dog food to me, I remember this old style being ok in the 80's but it certainly is not anymore, and Americans don't know what 'Executive' means when refering to a chef, which is why it is thrown around by every cook.

  • I worked in a restaurant part time once and one of my jobs was to serve the desserts. I always loved messing around with the jelly's with toothpicks on the plates. I did it mostly for my own enjoyment and not the customers >.>
