You know, he was simply giving you some ideas to use. If you look down your nose at store-bought sauces, then make your own and use this technique to decorate the plates to your own liking. Ditto the desserts...make your own. This is simply an idea for a nice presentation. Use your OWN imagination and skill set to make it your own. I can see using savoury sauces to decorate a dinner plate as well. Thanks for the ideas.

That looks like a plate of dog food to me, I remember this old style being ok in the 80's but it certainly is not anymore, and Americans don't know what 'Executive' means when refering to a chef, which is why it is thrown around by every cook.
i'm fed up with those people who just leave a comment to say that the gyu is not professional... does it really matters? here's a tip, use it or not but don't judge! By the way, what would be professional to U? Fondant a cake with a bazooka?
