@82daphy is not salty, is covered with sugar, in my country exist an especial machine that make churros shaped like a tube and put inside "dulce de leche" very sweet.

anyway, what i do is shove the dough in the mixer and mix it on high till all the smoke is gone before adding the eggs

THEN instead of pipping it into hot oil like that, pipe it into shapes in a grease paper lined sheet pan, freeze it THEN fry the thing, it's alot crisper then

a good tip is brake your eggs separately into a small bowl then add the egg to your mixtures, fry pan, etc

just so you can inspect the quality and avoid getting egg shells into your mixture etc
