When our potatoes are like that but not browning we dig into the side of the mound and pull out a few here and there for early potatoes, then push the soil back into the hole. Can do that a couple times if you have good soil by the end of the season.

@blueshoals You can plant them in tubs. I planted some Russian Bananas last year in old half barrels, and they grew really well. The ones I didn't get out of the tub sprouted again this year. I'm not sure about russets, but the smaller varieties can do well in tubs.
@survivalistboards ah alright thanks. say do you know of any places that are still selling seed potatoes? I see enough time to get another crop in but can't find seed anywhere. I found many places on the net but they seem to only ship from feb to early may. any ideas? thanks
Those could grow some more. It's best to pick and let them sun dry with dirt on them until the skin hardens.About 30 mins then pick them up and use or store.
@Ultimatemxcn Potatoes are a tuber, as soon as they form in the ground they are 'ripe'. The smaller 'new' potatoes generally are cooked and eaten with the skin on. I think that practice developed because they are a pain in the neck to peel, LOL. By not peeling them you will retain many of the minerals and vitamins when you cook them.
The larger potatoes keep better than the smaller ones in storage.
@deepwater1974 Go ahead and give it a try. Get some in the ground now, or get some planted in old tires, or leaky buckets. Just get to growing. You never know what you can accomplish until you try. If you think it might be too hot to grow them, then plant them in a shady area; if you think it might be too wet to plant them, start them above ground in containers. It doesnt take much effort. Lots of vids available on YouTube for non-traditional methods of producing a potato crop.
@theeastwatch mine start growing the roots in late winter, just don't break the root growth. You cut them up and as long as they have part with root growth they should produce.
The farmers almanac has some great tips, including videos, if you search around there.

Potatoes are by far the best thing to plant. 800sf can support one person for one year and any idiot can grow them without even trying.

@RichMenAreEvil - Check out the link in the description, it covers everything from planting the seed potatoes, all the way to harvesting them.
The potatoes will start to sprout eyes. You cut a section of the potato off with the "eye" and plant it with the eye pointing up.

Every 3 weeks I hill up soil around the plants to cover the bottom 2/3 of the plant. I think I get about double to tripe the harvest.
