Instead of smashing the chicken breast, wouldn't leaving it alone hold in the juices better? Could you butterfly the breast to cut down on the thickness? You could also serve the dog the raw chicken =) He might like it better.
Yes, I could have sliced the breast thinner. That would be fine! Maybe I will do that next time. I do plan to do Chicken Cordon Bleu sometime, which requires pounding chicken until it is very flat, so this was just a precursor to that technique. As far as feeding the dog raw chicken, I once mentioned that my dog would be getting the leftover chicken (I didn't say raw), and I got pounced on by all these people that said I would be killing my dog with Salmonella! Better to cook than argue!
