Seems inevitable that they will end up together. You can tell Nick has some feelings for her, but just haven't blossomed into a love thing. Same can be said for Jess as well. The season is almost half way done, and I expect to see something heat about between the two, now, Im not saying they will end up dating, but maybe a season finale kiss that will end up both of them desiring more. Here's hoping ;)
