Wouldn't dehydrated potatoes be more 'thrifty'? You can buy large cartons of dehydrated shredded hashbrowns at Sams Club for 8 dollars. The carton will feed an army (50 or so servings per carton) and the rehydrated hash browns will typically be ready in under 4 minutes. A plus is the fact that they taste just like waffle house hashbrowns.
