so is this approximately how project natal and the likes are working?

Well, actually, it's not exactly what Natal uses, as far as I'm concerned. It relies on 3d data from a sort of visual sweeping, pretty much like a laser radar.
But I bet they also use some computer vision :)

nope, I'm using only one camera. But it supposes the hand is static (i.e. you won't open it).
