@grrant54 If you can't buy or find actual truffle, just use truffle oil. It's far cheaper and has the truffle flavor. Won't be as up-front as actual truffle, but some people may prefer that. The oil tastes a lot more subtle.

Also, do realize that whenever you use stuff like Margarine and other butter substitutes, you're not actually doing much because the process of making those fats solid actually does a lot to remove their health benefits, and in some ways, they become worse than butter. And the flavor of butter is 100% superior. It adds such a nutty richness. Try using a little less butter, it will still taste good.
and Alba truffles are white. the best of all kind.normally you'd heard black truffle and white truffle. the black one we call it french truffle and white one we call it italian truffle. white truffle once sold for £64000/1.2kg.)
almost forgot.. truffle are wild fungus which grow in the ground. (very rare)
and to eat the truffle, just slice it over risotto and you get yourself one of the best dish you can every imagine.

the taste of truffle, to me is quite earthy.. in a amazing way though. of course to some people, especially who taste them 4 the 1st time, they think it smells.
if you have chance you should try truffles from Alba Pompeia, expensive, but worth every penny. especially when you are a true foodie.
Actually for the number of people the turkey could feed (8-10), it's actually quite reasonable. But yeah, truffle oil is great because it works two fold in raising the smoke point of the butter and flavor.
Plus the whole fact finding a truffle that size is near impossible because the high class restaurants usually get first dibs on it.
in europe u can easily find black truffle like that. its expensive but not that "expensive". truffle oil on the other hand, not good.. we don't like by product because its just not the right flavour.. especially when its comes to truffle. its quite hard to reserve the flavour of truffle. we make truffle oil at home and to be honest it lose its flavour very soon if you don't use it quick.
