Just a question, would you ever consider making bánh bò nướng rễ tre? I've tried multiple times but I can't get that stringy texture. Will you ever make a video on it? Thanks!!
Sau khi tất-cả các nguyên-liệu được trộn đều, hòa tan với nhau, thì đó là một hỗn-hợp lỏng hơi sệt (batter). Xin hỏi, vậy mất công nhào bột cho thành cục (dough) làm chi ? rồi lại hòa cho tan trong nước đường . Giải-thích gượng-gạo là vì bánh có texture giống gan bò, không e là kỳ-cục sao ? Gan bò đâu có xốp, có bọt như vậy. Thử hỏi sao người xưa không gọi là bánh "gan bò", hoặc bánh "gan heo", vì gan heo cũng có texture như gan bò vậy ! Dịch là "Cow cake" nghe tức cười lắm !

Hơn nữa..công đoạn trộn có ý nghĩa rất lớn với sự hoạt động của yeast...nó thêm các bọt oxi vào trong khối bánh giúp yeast hô hấp.

I must make these as soon as possible. I love steamed cakes, I love things made with rice flour, I love things made with tapioca starch, and I love yeasty things.. Oh, and I love coconut milk. :) I'm sure these are great.
@julievietnam02 In the video I used small condiment bowls which can also be used to make Banh Beo. It's not a traditional mould for Banh Bo but it works out OK for me. You can buy those at Asian supermarket.

@SnowSmiles99 Ban dung chen gi de hap banh? Cho moi cai banh minh chi hap 60ml (1/4 cup) bot thoi, banh nho thi chi can hap 10-15ph la chin roi. Lua ko nen qua manh se lam be banh.

@gaga808 it is normal that the color turned off-white...It depends on the kind of coconut milk and flour you use. Try to use high quality ingredients. If you want to keep the white color you may try putting some vinegar into the boiling water when you steam the cakes...
this is not vietnamese food. IN the filipines , they have it. This is bought to the filipines by ethnic chinese and the same in Vietnam. VIetnamese copycat of Chinese culture and most of everything.
Ok Helen, I did everything as you said because I bought a weight set that measured in grams. So everything went as planned, I even got the bubbles and the recipe rose after waiting 1hour and a half. However, when it came time to steam it, it still came out solid, wet and sticky. No honeycomed chambers it was solid inside. Based on what I told you, Is there anything that i'm forgetting?
@iwatcher69 well, if the cups were too big, the cakes would be hard. But you used egg cups...and got the bubble.... hmm I don't know why either hehe. Sorry I don't have any other tips rather than those provided in this video. Maybe try one more time... try to warm up the cups before pour in the mixture...
@iwatcher69 the rice bowl you have in the US should be too big compared to mine hihi. I did not have the cups for measurement when I tape this video, sorry! But due to your request I have just measured again, My rice bowl is just about 1 US cup (suprisingly!).
@HelenRecipes I'll try that again...but I got a question...I know that this may be stupid but you put the measurement in grams..I wanna know the measurement in cup size...when I steam mine the inside looks like there's too much flour..and there's no honeycomb like texture...
the yeast gets active and starts to bubble up. You need for the yeast to get activated otherwise the whole recipe is useless. when you steam the cakes the bubles in the cake creates the honeycomb pattern. Also, because of the active yeast, the cake is getting fermented. that's why it almost tastes like Sake'

lol Banh Bo = Cow cake?? bo mean moving not cow lady. when you ferment the starch power overnight you can hear the sound and the power expand like moving.
@GDQT hihi your explanation is interesting. The explanation in the video is what I found in Wikipedia and some other sources. I think it makes sense. Anyway noone knows which is the correct answer. :P

@Bibinbong Bột nổi màu nâu tiếng Anh là yeast, tiếng Đức là hefe ở nước ngoài người ta bán gói 7g để nhồi với 500g bột sẵn vậy ah, còn ở VN mình ko rành nữa bạn ah. Ở VN thì thôi ra mua bánh bò ăn cho nhanh cho rồi, làm chi mất công hehehe

I just came across your video last night and found it's very interesting. I have attempted this recipe twice all ready but both times has failed. I will try your way today...hope it will work.
@godo69 I make the same mixture for tapioca pudding also! though the coconut milk did seem extremely creamy in the recording, there was actually liquid in the container also. so to answer your question There should be no need to add water =] just heat, stir, and let dissolve ^_^ hope this helps!
@HelenRecipes I tried it already, but it didn't turn out so good. But it's actually my fault because I used the glutenous rice flour instead of the plain red flour. I'll try again and tell you how it went. it looked almost perfect when I attempted it, though. :)
@kbsBeautyy My God, I can't imagine how it would become with glutinous rice flour... Pls use rice flour because the functions and characteristics of these 2 types are completely different! Thanks for sharing and hope to hear good news from you ;))

1- Tại sao khi nấu xong thì bánh xẹp lại chứ ko phồng như lúc nấu?
2- Thấy chị hướng dẩn hấp chỉ 10-15'. Sao em nấu nó ko chín, vẫn dính đũa chị ơi mặc dù để lửa mạnh.
3- Có khi trên mặt bánh nở tét bét chứ ko phồng đẹp như bánh của chị. Có phải do em để quá lâu?

@vxion428 Please put it in a warm place (eg. in the oven which is NOT turned on) The yeast only rises at warm temperature.

Cam on rất nhiều rat nhieu Helen. Cách lam cua ban that la đon gian, nguyên liệu thi de tim. Minh lam 2 lan roi, banh ra ngon cuc ky nhung khi vai tieng dong ho sau thi banh lai kho va cung lai. Ban co gap trường hợp nay không? Please help! Thank you so much.

@vietxa banh nay lam xong nen an ngay, vi de lau, nhat la o xu lanh, banh se bi cung lai. Ban co the bao quan o noi a^m' hoac cho vao bao gia^'y se de duoc lau hon 1 chut. Neu bat buoc fai de lau thi truoc khi an dem hap lai chung 5ph la ok..

@HelenRecipes lol, I just read the wiki, the reference the author use to cite "Banh Bo" is from vdict(dot)com, a Vietnamese-English dictionary online . haha even the one who wrote it even don't know the meaning of Banh Bo. too many meanings for one word in Vietnamese that cause so much confusing. thanks for your video =)))

lol Banh Bo = Cow cake?? bo mean moving not cow lady. when you ferment the starch power overnight you can hear the sound and the power expand like moving.

@GDQT hihi your explanation is interesting. The explanation in the video is what I found in Wikipedia and some other sources. I think it makes sense. Anyway noone knows which is the correct answer. :P

Mình vừa làm bánh bò theo cách này, nhưng lúc nhồi bột mình cho vào 2 củ khoai lang tím luộc và nước luộc khoai vào( mình kết hợo cách làm bánh bò khoai tím), lúc hấp xong bánh màu tím đẹp tuyệt

Thanks for feedback , Em mo'i ghe qua Safeway but they don't have yeast like you did , they just sell Fleischmann's RapidRise yeast (highly active yeast) nen em confuse khong biet co dung loai mau nau giong chi chi lam khong , I already tried many different way to do that , that why I want to exactly like you show , thanks chi so much . Banh Bo is my favorite

@Bibinbong Bột nổi màu nâu tiếng Anh là yeast, tiếng Đức là hefe ở nước ngoài người ta bán gói 7g để nhồi với 500g bột sẵn vậy ah, còn ở VN mình ko rành nữa bạn ah. Ở VN thì thôi ra mua bánh bò ăn cho nhanh cho rồi, làm chi mất công hehehe

@21pxy You can buy the one i used at 4:13 It can measure sugar (gr) flour (gr) and water (ml) Not sure if it is available in your country :)

@godo69 I make the same mixture for tapioca pudding also! though the coconut milk did seem extremely creamy in the recording, there was actually liquid in the container also. so to answer your question There should be no need to add water =] just heat, stir, and let dissolve ^_^ hope this helps!

@HelenRecipes I tried it already, but it didn't turn out so good. But it's actually my fault because I used the glutenous rice flour instead of the plain red flour. I'll try again and tell you how it went. it looked almost perfect when I attempted it, though. :)
