For the polyester taste thing, you could try looking for tomatoes that were not grown in a greenhouse. Even "organic" tomatoes can be grown in greenhouses

Extra virgin all the way. Don't be cheap with olive oil :). Buy the best olive oil you can afford. I usually spend between $15.00 -$25.00 dollars for a liter of Extra Virgin. Because olive oil is the base ingredient in almost any Mediterranean recipe you need to give your meal a good start. Cheap oil will ruin an otherwise fantastic dish, don't mess around, spend the cash. XONG
