I wait until the jelly has completely cooled to room temperature before I put on the sugar. I keep the room temperature around 72F and the humidity is around 42%. You could try placing the jelly in the fridge to set. then once chilled take it out coat in sugar and place in an air tight container and back in the fridge until ready too serve.
Wow!!!!! So yummy!!!! May I know how do you "dry" the candies? When I made this, the sugar melted so fast that all candies become very humid...I even whipped the whole piece of candy before cutting them into pieces but it didnt work... Please tell me how you keep them dry.... thank you!!! :)
