@chrishdz1418 Hand and mouth are completely different. By blowing under the pizza he's exposing the bacteria from his mouth to the pizza, and therefore to the customer. It's much easier to clean the hands than it is to clean the mouth.

I have an idea. Instead of blowing on the pizza thereby contaminating it with saliva, why not put a little flour on the peel and while you are at it, make sure the bottom of the crust is also well floured. If you were to place a pizza with a damp crust into a 500F oven, you are going to have a blast trying to get it back out, since the crust will be permanently welded to the oven. or you could avoid the whole thing and make a real pizza! Thick crust, deep dish Chicago style.
