another thing i want to say is this-if your wine is too "juicy" or too "grape juice" you could add raisins and that will mellow out the wine. if you are just making wine and need to make it more clear-try egg whites. always works! just take 1 egg white,some wine from your carboy mix it up-but not too much -ad a pinch of salt and put it back into your carboy. right now im making wine out of soda,just water,cool aid and mint. i dont drink-but i like to make.
nicky -i have been watching your wine videos and i have to say that something is wrong. too much yeast for the wine and for the same cost you could have bought champagne yeast-1$ on ebay. the next thing is this-i didnt see or hear that you removed the "head" of the spirit. you know you could poison people if you dont take that out. 3- it looks delicious!!! im going to try watermelon too next time.

I am starting a batch of pear this week, Usually the 1st run is 80 proof but if you run it through a 2nd you should get 90 or 95 a 3rd may get you up to 110-120 my 5th brought mine to 175 proof!!! =-P I was debating putting it in my car rather than drinking it ...... yea well I drank it ....I think?!? ha! Did you put 5 gallons of water? Or did you subtract the watermelon and juices from the 5 gallons?
