dude, im sorry. you have not set your ISO. i have a d90 and i use it exclusively for video. you can set the ISO to whatever you want, but it will not change your video. you can only control the exposure using the auto-exposure lock button (though you can adjust the auto-exposure by using the little button with the light/dark square and the thumb wheel.)
new nikons (d5100,d7000) have iso control in video
this is why your exposure is shifting up and down. you need to set the AE-L button to hold.

You can set the ISO while in Movie mode? I mean, at the begining of the capture...

Yes. You should set your ISO, white balance mode, aperture etc. before you start your video recording.
