The sugar canes weren't there as decoration for the airlock. Water cannot pass through sugar canes. You can use them as air refills underwater. They also block skeletons' arrows. Pretty useful tools for survival.

@XTenima True, but I *think* those ones were just for decoration. If he had gotten rid of the water where he placed the sugar canes it would just be falling directly downwards and probably wouldn't flood the room anyways, but I could be wrong :B
