GS means Grand Sport. The option included the full instrument dash, bucket seats, floor shift, power disc brakes, & wider wheels & "sport" tyres.
It didn't include the engine mods of the GT's or the uprated suspension but was fairly popular as the "poor man's" GT, especially when optioned onto a Fairmont, on which all GT's were based. It was also available on Falcons.
