if the middle is gooey but the sides are already shrunk then you don't have to put it back in the oven..leave it outside as it will continue to cook and you'll get a nice moist brownies
If you dissolve the sugar with the eggs and then temper the chocolate into them, it prevents the siezing issue. Just thought I'd share that little tidbit =)
I tried your brownie recipe without the bitter chocolate LOL! but other than that they were really good. I have tried other recipes and their just nothing like this. Thanks again.
Here is a tip, if you want to be thought of as a cooking person, do NOT just drop an egg in the mixture. Drop the egg in a seperate clear container, and do a visual inspection of the egg to ensure it is ok, before adding it to the mix. I learned that in 6th grade home ec. class.
i buy organic eggs, and the quality from the particular farm I buy from is exceptional so I no longer feel the need to inspect individual eggs, but if you feel you might have an inferior ingredient you most certainly should inspect same. Furthermore, even with quality ingredients one should always check for an anomaly - if this occurs, I throw the whole thing away and start again.
