Because you can program the CPU of your edits you can have them fight/wrestle anyway you want to an extent. Very time consuming and the grappling isn't the best, but very satisfying.

Seriously, this is how they overcame the licensing issues of the octagon. They had the proper octagon dating back to the late 90's but as soon as the UFC learnt of this they brought the developers to court. The developers simply added more sides and suddenly it returned in later games.
