Okay at 9:59 exactly, is it me or does the meatball look as if it has a very angry face on it looking through the window at AB. Normally, Im fine with horror things back that face trully is creepy. BTW I think I want to try the swedish meatball recipe execpt maybe without the ground pork (I just plain hate pork of any kind)
"sweating" is just below sautee-ing. The onions are not to brown or sizzle so much as literally sweat (i.e. the juices will flow into the pan on low enough heat so they don't evaporate immediately)...adding salt to onions will usually make them sweat even more profusely. I find that this is usually at a med-low heat on my range. Hope that helps!

This sauce is a lot like the one used in:
a) tender is the loin 1
and
b) hittin the sauce
so im gunna assume most steak/beef sauces he will ever do will be a fond, deglazed with some beef stock, with heavy cream
