Why would you ever use a de-boned leg of lamb? He must be doing it "for the kids". The flavour of the meat is so much more intense if you cook lamb on the bone.
i'd use some sesame seed oil (not alot) with those spices and a small amount of oyster and soy sauce and i would use some curry powder (a table spoon) yum
