  • its very oily- may be you should try very less oil and add raw baigan into it for cooking (without frying them)

  • @komusica, when tomatoes are added they saperate oil totally, while taking out some into your plate avoid oil.

  • aameen, thanks, these recipes are where they start from. i didnt creat them or can not change them. you can add 2-3 spoons achari baingan in yogurt to make a kind of rayeta.

  • You can add less, in this dish oil shows a lot because of tomatoes and stays separate. Its good quality olive oil. we are all healthy :)

  • No it wont taste the same! if you have no choice only then use the big one. just peal half and leave half skin on.

  • they can not be made without Kalungi. go to any store and look for oinion seeds in plant and seed section. thats what kalungy seeds are.

  • 5 long eggplants, fry them in oil till golden, remove them from oil and add ¾ tspn crushed fresh garlic, ½ ts crushed fresh ginger in oil fry a little then add 1ts kalongi (Nigella seeds) and 1ts fennel seeds then add I-1/2 can of crushed tomatoes, cook for 4min or so, then add 1ts salt,1ts chili powder,1ts coriander powder, 1/2 ts turmeric and add fried eggplants. Cover it for a wile on low heat. At the end fresh coriander can be added.
