your old wheels are worthless. don't even bother taking them apart. take your frame to your local bike shop and have them measure your rear fork. you might have to respace it. talk to them about the cost of new wheels with a track hub and whether they build custom wheels or not.
you're opening a whole can of worms with no experience. you can do it but i recommend when it's all built up you go back to the shop and your work checked, especially chain line.
