The Yellow Devil I personally hate is in MM3 because instead of jumping/ducking the segments, he will sometimes turn into these slinky-like things and hops over to you and is very very hard to hop over or duck under, even with the slide.
If timed right, I'm sure it's possible to get behind him without taking damage. Navi Mode gives a hint of using the Rush Jet whilst fighting the Yellow Devil in Mega Man 3; it may be possible to fly over them with it when he uses that attack (and possibly for the whole battle, too, if enough energy for it is provided for the duration of the fight).
If you fight him enough, you should get used to the pattern, it is the same one every time. Stand still, more to the far side of the devil and just wait for blocks 1 or 2 lengths high and just hop straight up over each one as it comes by. At one point in each sequence, there will always be a 1 row high followed by a 2 row high and you just have to quickly jump one then jump the other. After a while it becomes like skipping rope and you can usually get through it untouched.

In the first assault of the bloches/blocks, I had jumped over a few of them. Due to the errectic pattern they launch in, they can be pretty difficult to dodge. The best technique I've found to minimize the amount of damage taken from them, therefore, is to hide behind the Yellow Devil once the bottom parts of his body have shifted to the other side of the battle room.

Easy difficulty, as well as Navi Mode, is helpful for beginning players to get accustomed to the first seven Mega Man games in the Mega Man Anniversary Collection. Though some enemies are not present, enemies are more easily defeated, and Mega Man takes less damage from attacks, it can still provide a decent amount of fun/challenge as the mode differences do not majorly affect gameplay.
Okay. I can see your logic in terms of dealing with challenge in games. Though, some NES games did have difficulty settings (which in some cases might be possible to consider the lesser mode the "easy" option), and the Sega Genesis did have games with an "easy" setting as well as "normal" and "hard" difficulties (considering that would be the time you played the NES, of course).
All right then. Mega Man 2 did have the "Normal" and "Difficult" settings originally, though (but the bad aspect about the harder one was that Metal Man could not be killed with a single hit from using the Metal Blade against him).
I love the song of this stage, but I couldn't beat the yellow devil when I first played this game. I didn't know about the pause glitch and he was to hard for me without cheating (I was 6 years old)
That rock devil made me cry when I was a kid!! It wasn't until later that I learned the cheap (but reasonable) way to defeat.
Love this song too, the Wily songs are always great, but this one is awesome, too bad it gets shuffled to the back by the other songs.

The only thing I hated about this game was whenever you fell off of a platform instead of jumping off is that you plummet to the ground

I know how does it work, it's just that if a game it's hard and you can't beat it, practice or quit.
Games didn't had an "easy option" back on time when I played a NES.... and if it had I don't know if I would have used it =/

The "M" weapon is the Magnet Beam. It can be retrieved in Elec Man's stage using the Thunder Beam or Super Arm to move the blocks that obscure it.
