My grandpa used to make this all the time! He used pillow cases to strain his wines. it works well :) Also I want to know why everyone worries about oxidation when you have head room! CO2 is heavier than O2, and therefore should sit on the bottom pushing O2 out first... someone correct me if I'm wrong but I think too many people havent given this much thought

I'll just keep making beer and sugar wine. At the longest, you get a decent percentage after only two weeks.

Thats quite a bit of work, and than you have to wait up to a year. I don't think I would have the patience to make this. But I bet it taste good.

Do you rack your wines? Perhaps it might help, because having it sit on the yeast can hurt the flavor.
