By then Iron Chef was in the middle of its 2nd season. (1993 debut). Ishinabe was a very famous french chef who by this battle timeline, he was alreay 7 wins and 1 loss. This battle would make his 2nd loss and Ishinabe retires because of stress of the show. Sakai takes over along with Chen Kenichi and others from 1995 on and we know them all today! =)

Well, this was the first season and only the 9th episode of the show from 1993, so things weren't really "up to speed" at this time. I do find it odd though that it's slower paced considering the battles were only 30 minutes long back then, not the 60 they show in this American version.
FYI, these early battles were only 30 minutes long. The hour long time limit was instituted soon after Sakai replaced Ishinabe.
Also, the small amount of ingredients reflected the small budget given to the show in the early years. Michiba's first Foie Gras Battle, for example, had only one lobe of foie gras per chef!
Who is that guy in the brown suit lurking behind the challenger? I'm guessing it was an assassin sent by the Iron Chef, but just at the last moment the challenger saw the assassin's reflection in his knife, whirled around, and within seconds had created five dishes that best articulated the assassin's flavor.
we have a nice "traditional" meal the day of christmas eve, and then on christmas day we all lounge around in our pajamas, open presents, and eat chinese take out. it's actually really fun.

This is the slowest-paced iron chef episode i've ever since. Both chefs are barely moving! Maybe it's just plain old efficiency.
