you're an idiot. notice the LIQUID that he pours into the bottle of water (LIQUID NIROGEN, smartass). also, since liquid nitrogen is so much colder than dry ice, it reacts a lot faster and produces nitrogen gas faster than the latter produces carbon dioxide. Hence the very small timespan from when they close the cap to when it goes boom.

Liquid nitrogen has a very low boiling point (-210C/-346F), so when you put it in a closed container, it turns into a gas making it expand. The bigger it gets in a small space and you get BOOM

To be more exact, the liquid starts to heat up as it is in hotter temprature then the -196°C (-320°F) so the nytrogen starts to become gas again and the gas takes up more space so, Like connigib8 said, expands.
