Normal tapping is when you quickly move your strumming hand to the fret buttons and hit or "tap" the notes higher than what your fret button hand is holding, there are plenty of ways of tapping, find one that suits you.

There's another kind of tapping, I think it's called Reverse Tapping (more difficult than normal tapping IMO, can be used for "Cliffs of Dover Intro solo B" expert), you move your fret button hand for each lower note while your strumming hand rapidly hits the higher notes.
