Italy seems to have the highest rates of Celiac disease and it may have come from intermingling between Europeans and Africans over the years. I'm one quarter Italian and developed the disease at the age of 52 although signs pointed to it earlier.
This is a very interesting video, helpful. Nuchia Foods makes a Gluten Free flour made of course from the Chia Seed. It is gluten free and can be used raw or in baking. Not only that it taste good it is loaded with nutrients and Omega-3.
I was hypothesizing @abcdefghism This is certainly true with lactose - the history of dairy is much less outside if Northern Europe. Bread is quite new in Africa...
Is there a racial factor in the genes? Likely that those with a Wheat eating heritage such as Northern Europeans might not. Aboriginals would be the opposite and be very much at risk as they are to sugar. Those of African heritage might be more at risk than Northern European.
@Amybabylol If you were my child I'd wash your mouth with soap. Quit whining and learn how to live your best life with this disease. You are not the only one on the planet that has a less then perfect childhood. Try being from an abusive home then being orphaned. Life is precious if you would only look at the good you would see that. Get over yourself and grow up!!!

I cant go to Dunkin Donuts and ask for a donut! Its scary u have no idea what ive been thru so dont tell me to grow up! Dont think that just cuz ur older than me which i assume that u have power over me... u ccan say what you want but u can never break me.... Actually i gues this disease did teach me something. tO be stronger......
@Amybabylol Griping & whining is only makes it worse. And yes I do know what it's like. I can't have grains or sugar of any kind but I'm not crying about it. It's ok to morn your loss at first but you stated you've had this disease for 6 years. Time to quit complaining and find ways to cope w/the disease where you can still be w/your friends and family and be a happy child as you so much deserve. Research on your own for recipes that you can make that taste good, maybe you'll help someone else!
@SlimLes To tell the truth i always had a dream about opening a bakery just for that but first i need to learn how to bake, and not make a large puff of smoke in the kitchen :) .... I cant get myself to tell any of my friends because im scared they wont understand, and will treat me differently. Im sorry i didnt know what you have, im sorry i have times where i can be very mean and stupid im sorry. I shoudnt of said those things. I hate myself, i should stop whining.
@Amybabylol When we go into a healthy change w/a whiner baby attitude it just makes it worse. I like your bakery idea. At your tender age peer pressure is soo strong but really... I don't give a dang what my friends/family or anyone else thinks if its going to be negative. And... you may be surprised that as you open up to your friends that you not only find who your true friends are but may even find you have friends that are struggling w/their own issues. Maybe start a support group?!

@Amybabylol Your life should improve on a gluten free diet. If it doesn't, eat just one whole food, maybe eggs, for 3 days, then add one food per day and see what happens. Keep careful records and find out what you can and can't eat. Most likely you can make your own donuts which are gluten-free.
@pellskate One good resource is Breaking the Vicious Cycle: intestinal health through diet. It is the original GI-healing diet and the book describes what is going on in Celiac and other GI problems.
lol i have celiac.... you can have just about anything other than wheat, (flour) like 80%% of oats,barley and rye, and some ingredients in packaged food ( such as chips,candy,and soda ;) ) maltodextrin, hydrolyzed anything, modified food starch, ( modified cor starch and soy starch r ok just not food starch, and some more :D lol
i can't eat any of that stuff, and xanthan gum gives me symptoms just as if i had eated gluten. i'm loosing my ability to eat dairy after 3 yrs GF. you can't eat that stuff if you ahve celiac... oats are okay if they are certified GF.
I've been doing a GF diet, but have not noticed much difference, but as you said xanthan gum is in almost everything GF, so after reading your blurb, I wonder if I am having the same problem...what do you eat?
@wcaaonline I can't have any grains or legumes due to the starches. I eat nuts and bake with almond or coconut flour. Check out the Specific Carbohydrate Diet: search on SCD recipes. If you want to know about the diet get the book "Breaking the Vicious Cycle." The SCD recipes use vegetables, fruits, and eggs to provide binders in baked goods.
@pellskate My diet now is:B: lactose free homemade yogurt, pumpkin, and hot milk, all with spices and enzymes. I may eat raisins if I add a bit of dextrose to one of these. L: usually nuts other than peanuts or cashews: too much starch. D: usually a pound of broccoli, brussels sprouts, or spinach with enzymes, plain meat, and yogurt. My blood pressure is down from 120/90 to about 95/60 and my cholesterol was 145 total, 83!!! HDL(good) 62LDL with 10 hours skating each week.
That isn't true. You shouldn't be eating barley and rye for sure. Oats are usually contaminated with wheat. And the oat protein is similar enough to wheat gluten that mostly it's just celiacs who've been gluten-free for many years who can tolerate it.
You probably have other food sensitivities and don't know it because you keep on eating the foods.

@5tonyvvvv What happens when you eat dairy? I figured out that I had lactose intolerance 25 years ago and have used lactose-free milk since. Recently I figured out that I also had casein intolerance. A gram or two of lactose gives me horrible cramping, tons of gas, and severe diarrhea. That's why I use lactase enzyme with commercial yogurt. Casein gives me light cramping just enough to keep me awake all night. I take trypsin or other protease enzymes with dairy.
@pellskate Gluten is definitely poison! Now I use DPPIV enzymes any time I suspect there might be gluten in or near my food. I also wash my hands frequently. Our 16 year old son has Asperger's Syndrome and spreads crumbs all over the place!

I don't know what the numbers are but there is a very small number if Africans and Asians while in the Europeans, the number is much higher.

That isn't true. You shouldn't be eating barley and rye for sure. Oats are usually contaminated with wheat. And the oat protein is similar enough to wheat gluten that mostly it's just celiacs who've been gluten-free for many years who can tolerate it.
You probably have other food sensitivities and don't know it because you keep on eating the foods.
