Apart from just talking the presenter through it as he decorated the plate, the only thing worth noting is at the start of the video he says he puts a little cocoa butter into the prepared chocolate so that it's a touch more fluid, and easier to pipe. However (this is me speaking, not him) cocoa butter is hard to find unless you work in the industry, but you can achieve the same thing with (preferably flavourless) vegetable oil. Just don't add too much.

He said he uses Dark Chocolate with Cacao butter, in my apprenticeship we used Dark Chocolate with a few drops of Kirsch (but any alcohol will work, or water for that mater) to get a thicker consistency . There is also a product by Felchlin called Scrivosa, and it is a ready softened chocolate substance that will not turn gray. We usually prepare 4 or 5 filled cones before service, and leave them on a plate on top of the oven where it is warm and take them as needed...
