most Asian dont measure how much salt, or any other seasoning and sauce when they cook, they put random amount because they can tell how much they need to put by looking at it. not even at the chinese/japanese restaurant. some place might measure it when making the sauce, but it never exact.
I worry that you leave the stove on when you finish with each pan. I think you need to turn off the heat when you are finished with each pan so you don't have a fire or hurt yourself.
what kind of meat are you using and what is the dark sauce you are using i would like to make this for my family?

you can buy cornstarch at your grocery store *any grocery store* hope that helps. @badillovega i do alot of asian cooking myself.
