I was down in Delacroix earlier this year fishing speckled trout & redfish. I'll be sure to have some boudin when I'm down there next spring. I'm hungry already for that cajun cuisine!!

Another great vid Blaze, got me headin to work now belly grumblin. You may have Acadiana down there but we got it up here too in the home land of Acadiana, Nova Scotia, Canada :). All we miss is the Cajun influence on food, but we still got fine eats and hogs get cooked up just riiiiight!

I have boudin in my freezer in San Diego! Well, ok I get it each year I go home to Port Arthur, TX every year. I have asked local butchers about it here and they don't have a clue! My grandpa made the best at his butcher shop back home. Also, can't forget the green onion sausage in the gumbo. Yum!
