Vietnamese Gingered Chicken make the marinade: -add minced GINGER, GARLIC, SHALLOT -add SALT, FISH SAUCE, AJI NGON SEASONING -add 300 grams of CHICKEN -leave for 15 minutes on stove: -a little OIL + 1.5 Tbsp of SUGAR (brown food colouring) -when colouring is yellow, add thinly sliced GINGER -when colouring is golden brown, add marinaded chicken -turn heat to max -add 3/4 cup of hot WATER -leave for 10 to 15 minutes decorate with: -cut SCALLION, CHILI PEPPERS
