The popular machinima Red vs. Blue is like an abridged series, but others could certainly do it.
while i like rvb, it's more parody than abridged series. because it doesn't really put too much specific focus on the main story.

Magmabear does exactly what you said about subtitles for Golden Sun.
SonsofSatire does Final Fantasy 7, but they've erased the subtitles by masking pieces of the background over the subtitles. Takes more work, but it looks clean and nice.
