The international chili society (google it) is another great place for award winning chili recipes. The base of my chili always starts with a tri-tip, diced up in to sugar-cube sized pieces, which are then slow cooked for at least an hour and a half in a very rich and thick concoction of a high quality chili spice (at least 7 tbl spoons) tomato paste, dark beer, and beef broth. Other spices that are commonly added are cumin, cayenne pepper, chipotle powder, Tabasco... many other options...
