@cutieclementine he means "Presunto" in portuguese, Prosciutto is how it´s called only in Italy, It´s ham cured, it´s the back leg of a Pork cured with alot alot of salt... you can look for it on wikipedia.. Cheers

My wife hates asparagus, but I made this for dinner and we both loved it. The only change I made was with prosciutto. I used fresh bacon (not smoked) Because prosciutto by Boars Head was $25.99 per pound.. (No butt is worth $25.99 per #.)
We have tried many of Chef John's recipes and they have all worked.
@valdezmiguel2 try green beans or mange-tout. even fresh peas should be okay. just make sure it's some kind of chunky green vegetagle which you can eat warm (so no salad). enjoy ;)

@holasierra95 Runny egg yolk is far from raw. I can't stand my eggs if they have a rubbery, powdery yolk. The protein in that part of the egg cooks really quickly but won't change it's texture. As long as the whites are cooked the yolk can be assumed to be cooked too.
@Nyjets7007 You could use some soy/vegan bacon bits (McCormick and Bacos are tasty brands), these actually cook up nicely and should flavor the oil in a similar way

@Nyjets7007 Depends on what type of recipe you're using it for. Apple and/or grape juice can make a similar substitute. You can even just use a vegetable stock (or chicken stock) to deglaze the pan; the flavor won't be the same of course, but it works well in a lot of recipes.
