This guy is using Spanish Chorizo, not mexican chorizo thats why your confused, mexican chorizo doesnt hold shape thats why it needs eggs or potatoes or something to bind to.
@cheeple Is that spanish chorizo different than the non refrigarated spanish chorizo I can buy in vacuum sealed packages in the grocery stores. I am not so fond of the taste.
@gfc56 - I've never seen chorizo that doesn't need refrigeration, what I meant is that Spanish chorizo can be cut and diced up like regular sausage but mexican chorizo needs to bind to something or will not hold shape thats why people put it in eggs or sometimes beans.
I thought you cooked the chorizo, then put the eggs in it and scrambled them both together? This is an interesting way to cook them though. Im gonna try it. Thanks for posting this!

If I use the smaller chorizo I add them to the eggs, but this way is also yummy :)
