potatoes don't get you fat. Potatoes are considered a starchy vegetable. Yes, it's carbs, but what isn't. Microwaving a potato isn't the most nutritious nor the most delicious way, but it sure beats eating potato chips.

I'm a chemist and all chemist know that carbohydrates can convert to fats if you want the short answer.
Once a buildup of glucose is present in your body, your body will try to convert it into other kinds of storage (glycogen and fatty acids).
There is a misconception in our generation that fat is bad for you and can clog your heart. That is not true.
What is true is a balance between fats and carbs is needed.
