here i go responding to a year old post... I currently live in Chicago and have tasted many-a thai curry. My favoritie curry by far is from a little place around the corner from me and they actually put peanut butter in their sauce as well. They are from Thailand themselves and do not wrinkle their noses at this. I now make my own panang curry as well. Loved the video btw.
Okay, I lived in Thailand and so I was looking for a recipe. I think Thais would wrinkle their nose at throwing peanut butter in the mix. Go for fresh ground peanuts, the sauce should be more red than brown usually.
Thanks for the feedback. Yes I have spent many months in Thailand as well and have been to many Thai restaurants in every major city in the US. You will find different styles of Thai curry in different regions.

It is delicious for sure! Spice it up with crushed red pepper without changing the flavor too much.
