  • Could you substitute Agave nectar or Stevia for the sugar? What would be the substiture ratios?

  • turbinado?

  • What is the type of sugar used in this recipe? I don't recognize it. Can't wait to make these! It might be a nice Sunday treat today!

  • That's for sure! I will try jack fruit as well. It seems it blends well to cupcake that can add more moist and aroma.

  • Is the Canola (rapeseed oil) a healthy idea?

  • Yummy. thank you very much for the recipe, i made it for my husband and I thinks Im some kind of cooking queen. Thank you!

  • is there anyway to make this cake without sugar.

  • This is wonderful! You are really good at teaching this- very entertaining and helpful. WIll look at your other recipes too. Thank you so much!

  • try editing instead of making yourself look silly by saying oh no i forgot to do this etc..

  • can u put the frosting in a piping bag and pipe it out to make it fancier

  • please get a stand mixer, it will go sooooo much quicker

  • I don't understand what possible value you think this comment could have? How would you feel if someone spoke to you this way. Shame on you! Big thumbs down man.

  • How sad that you are so angry at the world. I pity you.

  • ........no.

  • Very, very nice Videos, for real. The day the americans start eating 70% of they daily meals, just veggies instead of 70% meat like now,I bet you we can cut the highest epidemic of obesity in this country forever.I'm not 100% vegetarian, but I'm 70%, almost 80%, this is why I only weight 152 pounds. Thanks and Happy Holidays to everybody from: "Niagara Falls".

  • BEST CHEF EVER!

  • to much!!

  • Great recipe! I wanna try this. :]

  • how did the mixture combind correctly without using eggs?

  • they look delicious =)

i cant wait to try them out!

  • Hmms.. Was wondering, why dont you use a nozzle to place the buttercream instead? I find it nicer :D

  • You did not mention what temperature to bake the cupcakes. Unless I actually missed it. ☺

  • i believe he said 325 degrees.... but i'll double check to make sure!

  • Its also easier to spray the paper before you place the mixture into it. That makes it easier to pop them out after they are finished cooking! And a portion scoop(ice cream scoop) is handy to make sure u dont make a mess or fill them too much :)

  • these look absolutely FABULOUS! I missed the type of sugar you used though - is it regular granulated sugar, or is it something different?

  • These better be yummy Mr.. I am making them for my friend for valentine's day ... if they arent.. ill let you know hehe... but thanks.. i love your videos....E

  • i want to make these, but are there any substitute for the apple sauce? a loved one has an allergy. banana perhaps? (although i dont see that going as well with the carrot)

  • Pumpkin, banana, mango, squash and many other purees would all probably work. The crushed pineapple and canola oil all add moisture and binding, too, so you should be safe. If you try it, let us know how it turns out, we may feature it as an alternative on our website.

  • I reallly don't want to sound dumb, but what is the difference between shortening and butter?

  • That's not dumb at all. I had to look it up. Essentially it's the hydrogenation process to combine the vegetable oil that makes the difference, apparently. Shortening has a higher melting point, and allows baked goods to retain their shape at higher temperatures. In this recipe, shortening keeps the frosting firmer and stops it melting at room temperature. Thanks for your comment!

  • I might try these, but could I substitute the shredded carrot with zucchini to make zucchini bread? I don't care for carrot cake. (Although the frosting looks good.)

  • Zucchini Cupcakes with Buttercream Frosting sounds good to me! If you try that recipe and it works well, we'll add it as an option on our website.
