Its also easier to spray the paper before you place the mixture into it. That makes it easier to pop them out after they are finished cooking! And a portion scoop(ice cream scoop) is handy to make sure u dont make a mess or fill them too much :)

That's not dumb at all. I had to look it up. Essentially it's the hydrogenation process to combine the vegetable oil that makes the difference, apparently. Shortening has a higher melting point, and allows baked goods to retain their shape at higher temperatures. In this recipe, shortening keeps the frosting firmer and stops it melting at room temperature. Thanks for your comment!
I might try these, but could I substitute the shredded carrot with zucchini to make zucchini bread? I don't care for carrot cake. (Although the frosting looks good.)
Could you substitute Agave nectar or Stevia for the sugar? What would be the substiture ratios?
