The cow started to go to the bathroom as they were about to milk it. I would imagine that was live TV back in the day, so they were not able to stop filming or go to commercial while they got the cow to co-operate.

The ostrich is a little strange for me, too. But as people have said, the woman appeared to be more than a little nervous by the presence of the ostrich & was acting up because of it.
