  • 1st off congrats. I have watched your videos and and all the tips you provide, great work. Although any peace of meat smoked to perfection and brings smiles to so many people while they eat is great. I question 1 thing, I have been smoking for awhile and I always heard to put the fat side up while it is smoking to allow the fat juice to moisten the meat. Seeing you put the fat side down seems that the fat drips away from the meat. You obviously are doing something right cause your getting the

  • This is a great interview. Lots of times when a chef comes on the morning/ lunch hour shows they are very rushed and barely get to show the audience what it is that the audience really wants to see (How to actually prepare the food) but you were able to show the preparation and the final product and pack in alot of information with some great tips. i watch breakfast televison every once in a while and im sad that i missed this day.... Great Job :)
