spot on cooking style for trini curry chicken, as for seasoning I have problems finding shadow beni in PA myself so I use cilantro instead, its not as strong so you have to use more of it but the flavor is very similar, try it sometime.
Do you know how to make doubles? If so, do you know how to make the peppa they put on top? I loved UWI doubles and another vendor in Valsayn. Those videos would be great!
People, curry chicken didn't come/appear with no written recipe back in the days when it was 1st being made. Everyone did it how they knew, now there are tons of different ways to do this. Who is to say he’s wrong so stop the hating

Garam masala is the business, I ain't have none handy but I should re-do with it. Lastly, Shadow beni is hard to find in arizona. I can sometimes find it in asian markets but not consistently. @philly1537 you don't need channa or potatoes for curried chicken man. it gives it an entirely different taste. And yeh you can put tomatoes in curry...do you know how many roti shops sell it that way.
